Acorn Squash with Rustic Raisin Sauce
INGREDIENTS
- 1 1/2 pound (large) acorn squash
- salt
- 1 onion, chopped
- 1/3 c golden raisins
- 2 Tbsp water
- 1 tsp apple pie spice
- 2 Tbsp butter
- 4 tsp honey
- 1 tsp vanilla
- 2 Tbsp slivered almonds
PREPARATION
- Spray crock with cooking spray.
- Cut squash into quarters, seed.
- Sprinkle with salt
- Combine onion, water, raisins and spice in crock.
- Place squash, cut side down, on mixture.
- Cover, cook on low for 4-5 hours.
- Place squash on platter.
- Add remaining ingredients to crock, stir wll,
- Spoon mixture over wedges; sprinkle with nuts.
