Antipasto Tortellini Salad
INGREDIENTS
- 1 envelope Italian dressing mix
- 1/2 c EVOO
- 1/4 c red wine vinegar
- 3 Tbsp water
- 2 pkg (9-oz) refrigerated tortellini, cooked and rinsed
- 1 small red onion, finely chopped
- 8 oz mozzarella, cubed
- 1 green bell pepper, chopped
- 2 c cherry tomatoes, halved
- 1 can (2.25 oz) sliced black olives
PREPARATION
- Prepare dressing with EVOO, vinegar, and water.
- Combine remaining ingredients in large bowl.
- Add dressing, mix lightly.
- Refrigerate several hours until chilled.
