Apple Bacon Cheese Dinner Pies
INGREDIENTS
- 6 slices bacon, diced
- 1 package corn muffin mix
- 2/3 c flour
- 1 tsp paprika
- 1 egg, beaten
- 1/4 c milk
- 2 Granny Smith apples, sliced thin
- extra cheddar cheese shreds
PREPARATION
- Heat oven to 425
- Parchment and spray 2 baking sheets
- Cook bacon in skillet until crisp.
- Drain on paper towels, reserving drippings
- In mixing bowl, combine muffin mix, flour, paprika, egg, and milk to form dough.
- Divide into fourths.
- Put two portions on each baking sheet and pat into 7" rounds.
- Top with a layer of apple slices, leaving a 1" border.
- Fold dough roughly over apples.
- Brush apple slices and crust with bacon drippings.
- Bake for 10 minutes.
- Top with cheese and bacon; bake 7 minutes longer, until edges are golden.
