---++ Asparagus Lemon Chicken Stir-Fry ---+++ INGREDIENTS * 2 chicken breasts, cubed * salt * 1/2 c chicken broth * 2 Tbsp soy sauce * 2 tsp cornstarch * 2 Tbsp water * 1 Tbsp canola oil * 1 bunch asparagus, trimmed and cut into 2" pieces * 2 Tbsp jar garlic * 1 Tbsp fresh ginger * 3 Tbsp lemon juice * black pepper to taste ---+++ PREPARATION 1. Season the chicken with salt. 1. In 2 c measure, combine broth and soy sauce. 1. In a 1 c measure, combine cornstarch and water. 1. Heat mondo skillet over medium high. 1. Add 1 tsp canola oil and then asparagus. 1. COok about 3-4 minutes. 1. Add garlic and ginger, cook an additional minute. 1. Remove from skillet, set aside. 1. Turn heat to High. 1. Add 1 tsp canola and half of chicken. 1. Cook until browned; remove. 1. Repeat with remaining chicken. 1. Add soy sauce mixture to skillet, cook about 1-1/2 minutes. 1.
