BBQ Loaded Potato Soup
Ingredients
- 6 whole Large Potatoes
- 1 cup Diced Onions
- 4 cups Chicken Stock
- 2 Tablespoons Minced Garlic
- 1 Tablespoon BBQ Seasoning Or Dry Rub
- ¼ cups BBQ Sauce
- 1 cup Heavy Cream
- 1 cup Sour Cream
- 1 cup Shredded Sharp Cheddar Cheese
- 1 bag Bacon Bits To Garnish
- Sliced Scallions To Garnish
Preparation
- Wash, peel and cut your potatoes into 1/2-1 inch cubes.
- In your slow cooker, add potatoes, onions, stock, garlic, BBQ seasoning, and BBQ sauce. Cook on high for about 4-5 hour or low for 6-8 hours.
- Mix in heavy cream and cheddar cheese.
- Dish up into bowls and dollop each serving with sour cream. Sprinkle with bacon and sliced scallions.
