Bacon-Filled Medjool Dates
INGREDIENTS
- 6 slices bacon, diced, cooked, and drained
- 1/2 c pecans or almonds, toasted and chopped
- 1/2 c shredded Parmesan
- 24 dates
- 3 Tbsp honey
- 1 tsp snipped fresh thyme
PREPARATION
- Heat oven to 400
- Combine bacon, almonds and cheese.
- Stuff about 1 Tbsp mixture into each date.
- Place dates, filling-side up on ungreased, foil-lined baking sheet.
- Bake for 12-15 minutes. Cool slightly
- Drizzle warm dates with honey and sprinkle with thyme
