Bacon Jam
INGREDIENTS
- 1.5 lbs bacon, cut into 1" pieces
- 2 onions, thinly sliced
- 3 cloves garlic
- 1/4 c cider vinegar
- 1/2 c brown sugar
- 1/4 c maple syrup
- 1/4 c boiled cider or apple juice
- 3/4 c strong tea
- 2 bay leaves
- salt and pepper to taste
PREPARATION
- Cook bacon in mondo skillet until crisp.
- Remove with slotted spoon to crock pot.
- Add other ingredients.
- Cover, cook on HIGH for 3-4 hours.
- Remove bay leaves and process in blender.
- If too thin, cook in saucepan over medium until thickened.
- Store in refrigerator.
