Bacon-Wrapped Pork Tenderloin
INGREDIENTS
- Bacon -- enough slices to wrap tenderloin
- 1 lb pork tenderloin
- pepper grinder
- 1/4 c packed brown sugar
- 2 Tbsp apple juice
- 1 tsp Dijon mustard
- dash nutmeg
PREPARATION
- Heat oven to 425.
- Wrap bacon around meat. Grind pepper over bacon-wrapped meat.
- Place in foil-lined pan sprayed with cooking spray.
- Bake 20 minutes or until 135.
- Meanwhile bring remaining ingredients to boil in saucepan over medium heat, stirring occasionally.
- Brush meat with glaze. Bake 10 minutes or until 145
- Cover with foil and let rest 5 minutes before cutting.
