Baked Asian Chicken Thighs
INGREDIENTS
- 1/3 c Asian Toasted Sesame dressing
- 2 Tbsp creamy peanut butter
- 2 Tbsp soy sauce
- 1/4 tsp crushed red pepper
- 8 chicken thighs
- 1/2 lb baby bok choy, cut crosswise in half
- 1 yellow onion, sliced
- 1 red bell pepper, cut in strips
- 1 Tbsp minced ginger root
- 1 scallion, sliced
- 3 Tbsp chopped dry roasted peanuts
PREPARATION
- Heat oven to 375
- Combine first 4 ingredients and reserve.
- Brown chicken on medium (5 minutes).
- Place chicken in 13x9 pan.
- Add bok choiy, onion and pepper to skillet, cook on medium high three minutes , stirring frequently. Add reserved dressing mixture and stir.
- Pour skillet contents over chicken.
- Cover with foil and bake for 25 minutes.
- Serve over rice with scallion and chopped peanuts for garnish.
