Baked Chicken Thighs with Root Veggies
INGREDIENTS
- 4 chicken thighs
- 1/2 lb carrots, chopped
- 1/2 lb new potatoes, halved
- 2 Tbsp EVOO
- kosher salt
- pepper
- garlic powder
PREPARATION
- Heat oven to 450!
- Line rimmed baking sheet with parchment
- Arrange thighs and vegetables on baking sheet.
- Drizzle with EVOO, toss to coat.
- Sprinkle with salt, pepper, and garlic powder--make sure to get both sides of chicken.
- Turn chicken skin-side up.
- Bake for 40 minutes or until 165
