Balsamic Raspberry Chicken Breasts
INGREDIENTS
- 1/2 c raspberry preserves
- 2 Tbsp balsamic vinegar
- 1 Tbsp raspberry liqueur
- 4 boneless ckinless breast halves
- 1 Tbsp dried thyme
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tsp EVOO
- 1/2 c chopped red onion
- 1/4 c fresh raspberries
PREPARATION
- In small bowl, mix preserves, vinegar and liqueur.
- Pound breasts to 1/4" thickness between sheets of plastic wrap or in gallon bag.
- Heat oil over medium in mondo skillet.
- Cook onion until softened, about 3 minutes.
- Add chicken and cook 8-10 minutes or until cooked, turning once.
- Remove to plate.
- Leaving onion in skillet, add preserves mixture and cook, stirring constantly until thickened, 1-2 minutes.
- Spoon sauce over breasts.
- Top with raspberries.
