---++ Balsamic Raspberry Chicken Breasts ---+++ INGREDIENTS * 1/2 c raspberry preserves * 2 Tbsp balsamic vinegar * 1 Tbsp raspberry liqueur * 4 boneless ckinless breast halves * 1 Tbsp dried thyme * 1/2 tsp salt * 1/4 tsp pepper * 2 Tsp EVOO * 1/2 c chopped red onion * 1/4 c fresh raspberries ---+++ PREPARATION 1. In small bowl, mix preserves, vinegar and liqueur. 1. Pound breasts to 1/4" thickness between sheets of plastic wrap or in gallon bag. 1. Heat oil over medium in mondo skillet. 1. Cook onion until softened, about 3 minutes. 1. Add chicken and cook 8-10 minutes or until cooked, turning once. 1. Remove to plate. 1. Leaving onion in skillet, add preserves mixture and cook, stirring constantly until thickened, 1-2 minutes. 1. Spoon sauce over breasts. 1. Top with raspberries. -- Main.JMagGuthrie - 2014-08-17
