Barbacoa Pork
INGREDIENTS
Marinade
- 2.5 lbs pork loin
- salt & pepper
- garlic powder
- 3/4 c Coke zero
- 1/4 c brown sugar
- 1/4 c water
Sauce
- 1 c Coke zero
- 1 4 oz can diced green chiles
- 8 oz can tomato sace.
- 1 chipotle
- 1/8 tsp garlic powder
- 1/8 tsp cumin
- 1/8 tsp chipotle powder
- salt and pepper to taste
- 1/3 c brown sugar
PREPARATION
- Season pork with salt, pepper ad garlic powder and place in crockpot.
- Combine 3/4 c Coke zero and 1/4 c brown sugar, pour over pork.
- Marinate several hours or overnight in refrigerator. Turn to marinate evenly.
- Remove from fridge and add water and cook on high for 4 hours.
- Remove pork from crock and DISCARD LIQUID
- Shred pork with two forks.
- In same crockpot, combine 1 c Coke zero, chiles, tomato sauce, chipotle, garlic powder, cumin and chipotle powder and 1/3 c brown sugar.
- Add pork back to sauce, salt and pepper to taste.
- Cook on high for 1 1/2 hours.
