Barbacoa Roast
INGREDIENTS
- 3 lbs roast cut into 2" chunks
- 4 cloves garlic, minced
- 2 chipotles
- 1 onion, chopped
- 1/4 c lime juice
- 2 tbsp cider vinegar
- 3 bay leaves
- 1 Tbsp cumin
- 1 Tbsp oregano
- 1/4 tsp ground cloves
- 1/4 c beef broth
PREPARATION
- Combine ingredients in slow cooker, toss gently to combine.
- Cover, cook on LOW 6-8 hours.
- Remove chipotles and bay leaves.
- Shred meat.
