Barbecue Beef with Bow-Ties
INGREDIENTS
- 1 lb ground beef
- 1 red bell pepper, chopped
- 1.5 c mini bow-tie pasta
- 2.5 c beef broth
- 1/2 c barbecue sauce
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 c frozen corn kernels, thawed
- 1.5 c shredded Cheddar
PREPARATION
- Cook beef in mondo skillet until browned; drain.
- Add bell pepper, cook 1 minute. Stir in pasta, broth, barbecue sauce, salt and pepper.
- Heat to boiling.
- Reduce heat to medium, cover, and cook 15 minutes, stirring occasionally.
- Stir in corn and 1 cup of cheese.Top with remaining cheese.
- Cover, cook 3-4 minutes until cheese is melted.
