Barbecue Chicken Soup
INGREDIENTS
- 1 onion, chopped
- 2 Tbsp chili powder
- 1 tsp curry powder
- 1/2 tsp salt
- 1 tsp garlic
- 1 pint half-and-half
- 2 cups chopped cooked chicken
- 1 c barbecue sauce
- 2 cans black beans, rinsed and drained
- 2 cans tomato soup
- 1 can chicken broth
- sour cream (8 oz)
PREPARATION
- Spray non-cook dutch oven with cooking spray.
- Saute onion, chili powder, curry powder, salt and garlic for 4 minutes on medium-high or until soft.
- Stir in half-and-half, chicken, barbecue sauce, beans, tomato soup and broth.
- Bring to a boil, then simmer 6 minutes or until thoroughly heated.
- serve with sour cream.
