Barbecue Loaded Baked Potato Casserole
INGREDIENTS
- 6 slices bacon, diced
- 1 tub refrigerated mashed potatoes (24 oz)
- 2/3 c milk
- 1 c shredded Jack cheese
- 4 oz cream cheese
- 1/2 tsp pepper
- 3 c shredded cheddar
- 8 oz sour cream
- 1 can (4oz) chopped green chiles, drained
- 3 c shredded barbecued meat
- 3/4 c barbecue sauce
PREPARATION
- Heat oven to 375. Spray 13" x 9" pan with cooking spray.
- Cook bacon till crisp; remove to paper towels to drain. Reserve 2 Tbsp drippings
- In large glass vegetable cooking dish, stir together mashed potatoes, 2 Tbsp bacon drippings, milk, Jack cheese, cream cheese, pepper, and 2 c cheddar.
- Microwave on High 4 minutes.
- Stir in sour cream and drained chiles.
- Spoon potato mixture into bottom of prepared pan.
- Sprinkle with bacon and remaining 1 c cheddar.
- Spoon meat evenly over cheese. Drizzle with barbecue sauce.
- Bake, uncovered, 45 minutes or until bubbly.
- Let stand 10 minutes before serving.
