Barbecue Meatballs & Vegetables
INGREDIENTS
- 1/2 c mayonnaise
- 1/2 c original style barbecue sauce
- 1/4 c honey
- 1 Tbsp chili powder, divided
- 1 tsp pepper, divided
- 1 tsp salt, divided
- 1 lb ground beef
- 1 medium green bell pepper, cut into chunks
- 1 medium onion, sliced
- 1 c sliced mushrooms
- 1 zucchini, sliced
- 1 summer squash, sliced
- 1 8 oz can pineapple chunks, drained
PREPARATION
- Combine mayonnaise, barbecue sauce, honey and 2 tsp of the chili powder, 1/2 tsp salt and 1/2 tsp pepper.
- Mix meat with remaining chili powder, salt and pepper.
- Shape into 12 meatballs and brown on medium high in mondo skillet, drain on paper towels.
- In same skillet, cook vegetables for five minutes on medium.
- Reduce heat to low. Stir in sauce mixture and meatballs. Simmer on low for 15 minutes, stirring occasionally.
