South of the Border Bean and Tortilla Soup
Ingredients
- 2 tsp veg oil
- 1 med onion, coarsely chopped
- 1 15 can red beans (drained)
- 1 15 can black beans
- 1 14.5 oz can dieced tomatoes w/garlic & onion
- 1 tsp garlic
- 3/4 cup frozen yellow corn kernels
- 1 tsp chili powder
- 1/2 tsp cumin
- 1 14oz can vegetable broth
- 1/2 tsp sugar
- juice of 1/2 lime
- 4 oz tortilla chips
Preparation
Heat oil in skillet pot on medium, add onion. cook, in soup pot combine beans and tomatoes
Add onions, garilc, corn, spices to soup pot. Stir. Add broth sugar and lime juice.
Reduce to low, serve 7-10 minutes.
Serve over slightly crushed chips.
