---++ Beef Pot Pie ---+++ INGREDIENTS * 2 Tbsp EVOO * 1.5 lbs beef stew meat * 1 Tbsp Worcestershire * 3/4 tsp salt * 1/4 tsp pepper * 1.5 lbs potatoes, peeled and diced * 2 large carrots, peeled and cut into 1/4" half-moons * 2 medium parsnips, peeled and cut into 1/4" half-moons * 1 small red onion, chopped * 3 cloves minced garlic * 1 can beef broth * 2 Tbsp cornstarch in 1/2 c water * 1 c frozen peas, thawed * 1 pie crust * 1 egg beaten with 2 Tbsp water ---+++ PREPARATION 1 Heat oven to 450 1 Add oil to 10" or 12" cast iron skillet over high heat. 1 Toss beef with Worcestershire, 1/2 tsp salt, and pepper. 1 Add to skillet; brown, stirring 2-3 minutes. 1 Remove with slotted spoon and reduce heat to medium. 1 Add potatoes, carrots, parsnips, onion, and garlic; cook 5 mintues. 1 Add broth; bring to a boil and simmer 5 minutes, until crisp-tender. 1 Add cornstarch mixture, followed by beef, and peas. 1 Remove from heat and top with pie crust. 1 Cut a few vent holes and bake for 13-15 minutes, until golden and bubbly.
