Blintz Brunch Bake
INGREDIENTS
- 2 8-oz boxes cream cheese
- 1 15-oz container ricotta
- 5 eggs, divided
- 3/4 c sugar, divided
- 2 tsp lemon zest
- 3 Tbsp lemon juice
- 1 c flour
- 3/4 c melted butter
- 1/4 c milk
- 1 Tbsp baking powder
PREPARATION
- Heat oven to 350. Spray 13" x 9" pan with cooking spray.
- Beat cream cheese, ricotta, 2 eggs, 1/4 c sugar, lemon zest, and juice in large bowl with mixer until blended.
- Whisk 3 eggs, sugar, flour, butter, milk, and baking powder in separate bowl until blended.Spread 1/3 of the batter onto the bottom of prepared pan.
- Cover with cheese mixture, then remaining batter.
- Bake 45 minutes, or until center is set.
