Bow-Tie Pesto Alfredo
INGREDIENTS
- 12 oz box bow-tie pasta
- 2 c frozen peas
- 1 12-oz package cooked smoked chicken sausage w/apple, mooned
- 2 tsp EVOO
- 8 oz sliced fresh mushrooms
- 1 medium red bell pepper, sliced
- 2 c bottled alfredo sauce
- 2 Tbsp basil pesto
- 2 Tbsp finely shredded Parmesan
PREPARATION
- Cook pasta, add frozen peas for last minute.
- Drain; return to pot and cover to keep warm.
- Heat mondo skillet on medium.
- Add sausage, cook about 3 minutes, till heated through and lightly browned.
- Remove sausage.
- Add oil.
- Add mushrooms and pepper, cook for 5 minutes, until tender, stirring occasionally.
- Stir in Alfredo sauce, and pesto; heat through.
- Add sausage mixture to cooked pasta, stir to coat.
- Sprinkle with Parmesan.
