Bratwurst and Broccoli Slaw

INGREDIENTS

  • 3 large onions, sliced 1/2" thick
  • 1/2 c cider or apple juice
  • 2 cloves garlic
  • 1/4 tsp dried thyme, crushed
  • 1/4 tsp pepper
  • 8 bratwurst, pricked
  • 1/4 c buttermilk
  • 1 Tbsp mayonnaise
  • 1/4 tsp caraway seeds, crushed
  • 2 cups broccoli slaw
  • 8 whole-grain hotdog buns.

PREPARATION

  1. Place bratwurst in mondo skillet; cover with water.
  2. Bring to a simmer and cook 15 minutes, to release fat.
  3. In small crock, combine onions, cider, garlic, thyme, and pepper.
  4. Place bratwurst on onion mixture.
  5. Cover and cook on LOW 5 hours.
  6. Combine buttermilk, mayonnaise and caraway seeds in medium bowl.
  7. Stir in slaw mix; chill.
  8. When bratwurst is finished, remove sausages and onions with slotted spoon; discard liquid.
  9. Serve on buns with the onions and slaw.
