---++ Bruschetta Chicken

*Ingredients*
| 2 c | cooked chicken, cubed |
| 1 tsp | olive oil |
| 1 tsp | Italian seasoning |
| 2 cans | Italian style diced tomatoes |
| 2 cloves | garlic, chopped |
| 2 c | stuffing mix |
| 2 c | shredded Mozzarella cheese |

Preheat oven to 400.  Spray 13"x9" pan with cooking spray.  Toss the chicken with the olive oil and Italian seasoning.  Place in a layer in the bottom of the pan.

Stir together tomatoes, garlic and stuffing mix in a large bowl and set aside to soften 5 minutes.   

Sprinkle the cheese on the chicken and cover with stuffing mixture.   

Bake, uncovered, 20 minutes.  Let stand 5 minutes before serving.
