Buckeye Bars
INGREDIENTS
- 1/2 c butter, softened (use the microwave)
- 3/4 c crunchy peanut butter
- 22 vanilla wafers, crushed.
- 2 c powdered sugar
- 1/2 of 8oz tub frozen whipped topping (do not thaw)
- 3 oz baking chocolate squares
PREPARATION
- Line 8" square pan with foil, leaving "handles'
- Beat butter and peanut butter till smooth, gradually add vanilla wafer crumbs, then powdered sugar. Press into bottom of pan.
- Microwave whipped topping and chocolate for 1 minute, stir, then microwave for 15-30 seconds until chocolate melts completely. Stir until well blended.
- Spread over peanut-butter layer
- Chill 2 hours then use foil "handles" to remove from pan. Cut into bars.
