---++ Caramelized Onion Pot Roast ---+++ INGREDIENTS * 1 pot roast * 1 Tbsp EVOO * 1 tsp salt * 1/2 tsp pepper * 6 onions, sliced * 1 1/2 c beef stock * 3/4 c beer * 2 Tbsp brown sugar * 3 Tbsp Dijon mustard * 2 Tbsp cider vinegar ---+++ PREPARATION 1. Place onions in crock; toss with brown sugar and vinegar. 1. Cook on HIGH for 15 minutes, then LOW for 45 or until onions begin to caramelize. 1. Heat oil in skillet over medium-high; brown beef on all sides, about 10 minutes, total. 1. Season with salt and pepper. 1. Place beef on onions. 1.
