Caramelized Onion Pot Roast
INGREDIENTS
- 1 pot roast
- 1 Tbsp EVOO
- 1 tsp salt
- 1/2 tsp pepper
- 6 onions, sliced
- 1 1/2 c beef stock
- 3/4 c beer
- 2 Tbsp brown sugar
- 3 Tbsp Dijon mustard
- 2 Tbsp cider vinegar
PREPARATION
- Place onions in crock; toss with brown sugar and vinegar.
- Cook on HIGH for 15 minutes, then LOW for 45 or until onions begin to caramelize.
- Heat oil in skillet over medium-high; brown beef on all sides, about 10 minutes, total.
- Season with salt and pepper.
- Place beef on onions.
- Combine remaining ingredients and pour over beef & onions.
- Cook on LOW 8-10 hours.
