---++ Cauliflower Mashed "Potatoes"
---+++ INGREDIENTS
   * 2 12oz bags cauliflower
   * 3/4 c shredded Cheddar-Jack or similar cheese
   * 3/8 c sour cream
   * 3 Tbsp butter
   * 1/4 tsp pepper
   * 1/4 tsp seasoned salt
---+++ DIRECTIONS
   1. Place cauliflower in microwave safe bowl.
   1. Cover and cook on HIGH 8 minutes
   1. Stir in remaining ingredients and microwave 6 minutes longer or until tender
   1. Assault with stick blender.
