Celebration Cake
INGREDIENTS
Cake
- 1 box devil's food cake mix
- 1 box 4-serving size) chocolate instant pudding
- 4 eggs
- 1/3 c vegetable oil
- 1 c liqueur
- 1 c sour cream
Frosting
- 1 c butter, softened
- 4 oz cream cheese
- 3 c powdered sugar
- 1/4 c liqueur
- 1 tsp vanilla
Glaze
- 4 oz bittersweet chocolate, chopped
- 1/2 c heavy whipping cream
- 1/4 c light corn syrup
- 2 tsp vanilla
- 1/3 c toasted nuts
PREPARATION
- Heat oven to 375
- Spray 2 9" layer pans with cooking spray
- In large bowl, beat all cake ingredients with mixer on medium 5 minutes.
- Pour batter into pans.
- Bake 35 - 45 minutes. or until toothpick comes out clean.
- Cool ten minutes in pan, then remove from pan to cooling racks, cool completely.
- In large bowl, beat butter and cream cheese on medium until light and fluffy.
- Reduce speed to low; add powdered sugar, 1 cup at a time.
- Add 1/4 c liqueur and 1 tsp vanilla.
- Beat until spreadable.
- Place 1 layer on plate.
- Spread with 1/3 frosting.
- Top with second layer. Frost with thin layer to seal in crumbs.
- Refrigerate 30 minutes--top with remaining frosting.
- Place chopped chocolate in small bowl.
- In small saucepan, heat whipping cream over medium until small bubbles form around edged.
- Pour over chocolate in bowl; let stand one minute.
- Stir with whisk until chocolate is melted.
- Add 2 tsp vanilla and corn syrup. Stir until smooth.
- Let stand 10 minutes to thicken.
- Pour glaze over cake, letting some run down sides; sprinkle nuts around edge of cake.
- Store in refrigerator.
