Cheesy BBQ Chicken Rigatoni
INGREDIENTS
- 2 tsp EVOO
- 1.5 c shredded cooked chicken
- 6 sliced bacon, diced,, cooked, drained
- 1/2 c diced red onion
- 2 cloves minced garlic
- 9 oz uncooked rigatoni
- 2 3/4 c chicken broth
- 1/2 c BBQ sauce
- 1 c cheddar
PREPARATION
- Heat oil in mondo skillet over medium
- Cook chicken, bacon, 1/4 c onion, and garlic in oil 2 minutes, stirring occasionally.
- Add pasta and chicken broth; heat to boiling.
- Cover; cook 10-15 minutes stirring occasionally until pasta is tender
- Stir in 1/4 c BBQ sauce and cheese; cook 1 minute to melt cheese.
- Serve topped with remaining BBQ sauce and onion.
