Cheesy Beef & Bacon Meatloaf
INGREDIENTS
- 1 lb bacon, diced and cooked ill crisp
- 1 1/2 lbs ground beef
- 1 1/2 c shredded cheddar
- 2 eggs, beaten
- 1/3 c bread crumbs
- 1/3 c mayonnaise
- 1 Tbsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 c ketchup
- 1/4 tsp Tabasco
- 3 Tbsp Dijon mustard
Preparation
- Preheat oven to 375.
- Set aside 1/2 cup bacon for topping.
- In a large bowl, combine remaining bacon, beef, cheese, eggs bread crumbs, mayonnaise, Worcestershire salt and pepper; set aside.
- Mix together ketchup, hot sauce and mustard.
- Reserving 3 Tbsp for topping, mix the rest of the ketchup mixture with the beef mixture.
- Put beef mixture in loaf pan. Spread reserved ketchup mixture over beef, then sprinkle with bacon.
- Bake for one hour. Let stand ten minutes before serving.
