Cheesy Crockpot Tortellini
INGREDIENTS
- 1 Tbsp EVOO
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 28oz can crushed tomatoes
- 1 can mild Ro-Tel
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- salt and pepper to taste
- 1 9 oz package tortellini
- 1 c shredded mozzarella
- 1/2 c shredded cheddar
- 2 tsp dried parsley flakes
PREPARATION
- Heat EVOO in mondo skillet over medium-high.
- Cook beef, onions and garlic until beef is brown; drain.
- Place beef mixture, crushed tomatoes, Ro-Tel, oregano, and basil in crock.
- Season with salt and pepper.
- Stir until well-combined.
- Cover and cook on LOW for 7-8 hours.
- Uncover and stir in tortellini; top with cheeses and sprinkle with parsley flakes.
- Cover and cook 30 minutes on LOW or until tender.
