Ingredients
- 2 onions, thinly sliced
- 2-4 lbs chicken thighs, skinned
- 2 cans diced tomatoes
- salt and pepper
- 2 cloves minced garlic
- 1 c white wine or broth
- 3 Tbsp capers
- 20 pitted Kalamata olives, coarsely chopped
- fresh parsley or basil, a "bunch"
- 16 oz pasta cooked according to pkg directions
Prep
- Place onion in crockpot and cover with chicken
- in a bowl stir together tomatoes, salt, pepper, garlic and wine, pour over chicken
- cover and cook on low for 7-8 hours
- stir in capers, olives and herbs just before serviing
- serve over cooked pasta
