Chicken with Herbed Tomato and Corn
INGREDIENTS
- 2 chicken breasts
- 1 Tbsp EVOO
- 2 shallots, chopped
- 1 c frozen corn
- 1 can diced tomatoes, undrained
- 2 Tbsp lime juice
- 1/4 c parsley, chopped
PREPARATION
- Cut chicken into cubes.
- Heat oil in skillet on medium.
- Add chicken. Season with salt and pepper.
- Cook 5-8 minutes, until no longer pink inside.
- Remove from pan and set aside.
- Add shallots, corn, and tomatoes to pan. Cook 5 minutes.
- Return chickent o pan. Add lime juice and parsley; heat through.
