Chicken Marsala
INGREDIENTS
- 1 Tbsp jar garlic
- 1 Tbsp EVOO
- 4 chicken breast halves
- 1 tsp salt
- 1/2 tsp pepper
- 2 jars sliced mushrooms
- 1 c sweet marsala wine
- 1/2 c water
- 1/4 c cornstarch
PREPARATION
- Spray 4-qt crock with cooking spray.
- Place garlic and oil in bottom of cooker.
- Sprinkle chicken with salt and pepper. Place on garlic in cooker.
- Place mushrooms over chicken, pour wine over all.
- cover, cook on LOW 5-6 hours.
- Remove chicken from cooker and tent with foil to keep warm.
- In small liquid measure, whisk cornstarch and water until lump-free.
- Stir into liquid in crock. Set heat to HIGH, cover and cook 10 minutes.
- Return chicken to cooker, cover and cook for 5-7 minutes, until hot.
- To serve, spoon mushroom mixture over chicken breasts.
