Chicken Noodle Soup

INGREDIENTS

  • 1 Tbsp EVOO
  • 2 cloves chopped garlic
  • 8 scallions, sliced
  • 2 carrots, chopped (1 cup)
  • 2 c cooked chicken
  • 2 c uncooked noodles
  • 1 tsp parsley flakes
  • 1/4 tsp pepper
  • 1 bay leaf
  • 5 1/4 c chicken broth

PREPARATION

  1. in black pot, heat oil over medium.
  2. Add garlic, onions, and carrots, cook 4 minutes.
  3. Stir in remaining ingredients. Heat to boiling.
  4. Cover, simmer time listed on noodle package or until noodles are tender.
