Chicken Tamale Casserole
INGREDIENTS
- 3 c shredded chicken
- 1 can chicken broth
- 3 Tbsp cocoa
- 4.5 Tbsp chili powder
- 2 tsp garlic powder
- 1.5 tsp cumin
- 1 pkg corn muffin mix
- 3/4 c sour cream
- 1 c three-cheese shreds
PREPARATION
- Heat oven to 400. Spray 8" square pan with cooking spray.
- Bring chicken, broth, cocoa, chili powder, garlic powder, and cumin to a boil in saucepan.
- Reduce heat; simmer for 20 minutes or until thickened, stirring frequently.
- Spread in bottom of prepared pan.
- Prepare muffin batter as directed on package. Stir in 1/2 c sour cream.
- Spread over chicken mixture; top with cheese.
- Bake 20 minutes or until golden brown.
- Serve with remaining sour cream.
