Chicken Thighs with Caramelized Onion Dressing
INGREDIENTS
- 3 slices bacon, diced
- 3 large onions, halved and sliced
- 2 c ciabatta cubes, dried
- 1/2 c chicken broth
- 1 egg, lightly beaten
- 2 Tbsp parsley, snipped
- 1/4 tsp pepper
- 4 skinless boneless thighs
- 1 Tbsp EVOO
- Snipped parsley for garnish
PREPARATION
- Heat oven to 425
- Cook bacon on medium about 10 minutes, till crisp.
- Remove with slotted spoon to paper towel.
- Reserve 2 Tbsp of drippings.
- Add onions, turn heat to Medium Low
- Cover, cook 15 minutes or until onions are tender, stirring occasioanlly.
- Uncover, cook over medium-high 3-5 minutes, until golden.
- Remove from heat.
- In yellow bowl, combine bacon, onion, bread cubes, broth, egg, 2 Tbsp parsley and pepper.
- Stir gently to combine.
- DIvide among 4 coral oven-proof mugs, set aside
- In the same skillet, cook chicken in EVOO over medium, about 5 minutes or until browned on both sides.
- Place one thigh in each mug.
- Bake, uncovered, 20-25 minutes or until stuffing reads 165.
- Sprinkle with additional parsley if desired.
