Chicken with 40 Cloves of Garlic
Ingredients
- 2 Tbsp butter
- 40 cloves garlic (peeled) -- about 4 heads
- 8 boneless, skinless chicken thighs
- 2 onions, finely chopped
- 4 stalks celery, chopped
- 1 tsp dried thyme
- 1 Tbsp salt
- 1/4 tsp nutmeg
- 1/2 c white wine or vermouth
PREPARATION
- Melt butter over medium-low heat.
- Add garlic and cook, stirring often until it begins to soften and turn golden.
- Remove garlic to slow cooker.
- Brown chicken on medium-high heat and add to slow cooker.
- Add onion and celery and cook until softened.
- Add seasonings and cook one minute.
- Add wine/vermouth and bring to a boil; pour over chicken.
- Cook on low for 5-6 hours or high for 2.5-3 hours.
- Serve with mashed potatoes
