Chocolate Raspberry Bites
INGREDIENTS
- 1/4 c raspberry jam or preserves
- 1 9 oz package chocolate wafers
- 1 c semisweet chocolate chips
- 2 tsp shortening
PREPARATION
- Spread about 1/2 tsp jam on flat side of wafer, top with another wafer, flat side down.
- Melt chips and shortening in microwave in 30 second bursts, stir until smooth.
- Put rack over waxed paper and put wafers on rack. Spoon and spread icing over cookies.
- Let stand until cool. Store in refrigerator.
