Chunky Beef, Cabbage and Tomato Soup
INGREDIENTS
- 1 lb lean ground beef
- 1.5 tsp kosher salt
- 1/2 c diced onion
- 1/2 c diced celery
- 1/2 c diced carrot
- 28 oz can diced tomatoes
- 5 c chopped green cabbage
- 1 box beef stock
- 2 bay leaves
PREPARATION
- In Dutch oven, brown ground beef with salt, breaking up into small pieces.
- Add onion, celery, and carrots and saute for 4-5 minutes.
- Add tomatoes, cabbage, stock, and bay leaves.
- Bring to a boil, then cover, and simmer on low for 40 minutes.
