Coq au Vin
INGREDIENTS
- 8 chicken thighs
- 2 tsp of salt
- 1/2 tsp of pepper
- 2 garlic cloves, crushed
- 1/2 tsp of thyme
- 1 Tbsp of parsley
- 1 bay leaf
- 6 slices of bacon; diced, cooked and drained
- 1/2 c of red wine
- 12 ounces of mushrooms, sliced
- 1 onion, chopped
- 8 oz carrot twigs
PREPARATION
- Place chicken in slow cooker.
- Season with salt, pepper and herbs.
- Place bacon and vegetables on top, pour wine over all.
- Cover, cook on LOW for 8 hours.
