Coq au Vin

INGREDIENTS

  • 8 chicken thighs
  • 2 tsp of salt
  • 1/2 tsp of pepper
  • 2 garlic cloves, crushed
  • 1/2 tsp of thyme
  • 1 Tbsp of parsley
  • 1 bay leaf
  • 6 slices of bacon; diced, cooked and drained
  • 1/2 c of red wine
  • 12 ounces of mushrooms, sliced
  • 1 onion, chopped
  • 8 oz carrot twigs

PREPARATION

  1. Place chicken in slow cooker.
  2. Season with salt, pepper and herbs.
  3. Place bacon and vegetables on top, pour wine over all.
  4. Cover, cook on LOW for 8 hours.
