Coq au Vin
INGREDIENTS
8 chicken thighs
2 tsp of salt
1/2 tsp of pepper
2 garlic cloves, crushed
1/2 tsp of thyme
1 Tbsp of parsley
1 bay leaf
6 slices of bacon; diced, cooked and drained
1/2 c of red wine
12 ounces of mushrooms, sliced
1 onion, chopped
8 oz carrot twigs
PREPARATION
Place chicken in slow cooker.
Season with salt, pepper and herbs.
Place bacon and vegetables on top, pour wine over all.
Cover, cook on LOW for 8 hours.
