Corn & Zucchini Flan
INGREDIENTS
- 4 good eggs
- 1/4 c half-and-half
- 4 oz cream cheese
- 1/2 Tbsp cornstarch
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 medium zucchini, grated and squeezed
- 1 1/2 c corn kernels
- 2 Tbsp fresh basil, chopped or 1 Tbsp dried.
PREPARATION
- Preheat oven to 400
- Prepare six ramekins by spraying with cooking spray.
- In large mixing bowl, combine eggs, half-and-half, cheese, cornstarch, salt, and pepper.
- Beat with an electric mixer on medium for 1 minute or until thoroughly blended.
- Stir in zucchini, corn, and basil.
- Spoon mixture into ramekins.
- Place ramekins on baking sheet and bake for 30-35 minutes or until puffed slightly golden brown.
- Cool 5 minutes.
