Cowboy Meatloaf & Potato Casserole
INGREDIENTS
- 1 lb ground beef
- 3/4 c chopped onion
- 1/3 c bread crumbs
- 1/4 c barbecue sauce
- 1 egg, beaten
- 2 tsp chili powder
- 1 package steam & mash potatoes
- 1 Tbsp butter
- 1 can evaporated milk
- 1 tsp parsley flakes
- 1 tsp garlic powder
- 1/2 c bacon bits
- 1/4 c french fried onions
- 2/3 c Mexican shredded cheese
PREPARATION
- Heat oven to 400. Spray 9" square baking dish with cooking spray.
- Mix meat, onion, bread crumbs, barbecue sauce, egg, and chili powder.
- Press into bottom of prepared dish.
- Bake 20-25 minutes or until 160.
- Meanwhile microwave potatoes according to package directions.
- Place in medium bowl, Add butter, milk, parsley and garlic powder, mix well.
- Gently stir in bacon bits and French fried onions.
- Heat broiler.
- Spread potato mixture over beef mixture. Top with cheese.
- Broil 4" from heat 3-5 minutes or until cheese is melted.
