Cranberry Walnut Acorn Squash
INGREDIENTS
- 2 acorn squash, halved, seeds removed
- 1 c walnuts, roughly chopped
- 1 c fresh or frozen cranberries
- 1/2 c brown sugar
- 1/4 c butter
PREPARATION
- Heat oven to 375
- Combine walnuts, cranberries and brown sugar.
- Place 1/4 mixture in each squash half.
- Top each with 1 Tbsp butter
- Place in baking dish and loosely cover with foil
- Bake for 1.5 hours or until fork tender
