Creamy Pesto Fish
INGREDIENTS
- 4 frozen haddock, cod or halibut (about 1 lb total) -- do not thaw
- 1/4 c mayonnaise
- 2 Tbsp pesto
- 1 tomato, chopped
PREPARATION
- Heat oven to 450
- Place fish in 13" x 9" pan.
- Mix mayonnaise and pesto, spread onto fish
- Top with tomato
- Bake 15-20 minutes, until fish flakes easily
