---++ Creamy Ranch Chicken Casserole
---+++ INGREDIENTS
   * 1 bell pepper, chopped
   * 1 onion, chopped
   * 1 Tbsp EVOO
   * 2 chicken breasts, cut up and cooked
   * 1 can condensed cream of chicken soup
   * 1 can mild rotel
   * 1 c ranch dressing
   * 1 tsp chili powder
   * 1.5 c shredded cheddar
   * 12 corn tortillas, cut into strips
   * 1 c coarsely crushed tortilla chips
---+++ PREPARATION
   1. Heat oven to 375
   1. Cook pepper and onion in oil in large skillet 5 minutes or until crisp-tender; remove from heat.
   1. Stir in chicken, soup, rotel, ranch, and chili powder.
   1. spread 1/3 of tortilla strips in 13" x 9" pan.
   1. Top with 1/3 chicken mixture and 1/3 cheese.  Repeat layers twice.
   1. Bake 30 minutes or until heated through.
   1. Top with tortilla chips.
