Crockpot 5-Cheese Spinach Dip
INGREDIENTS
- 1 12-oz jar roasted red peppers
- 1 6 1/2-oz jar marinated, quartered artichoke hearts
- 1 box frozen chopped spinach, thawed and squeezed
- 8 oz Mozzarella Fresca, cubed
- 1 1/2 c (6 oz) shredded Asiago
- 6 oz cream cheese, softened and cubed
- 1 c (4 oz) crumbled Feta
- 1/3 c shredded provalone
- 1/3 c minced fresh basll
- 1/4 c finely chopped red onion
- 2 Tbsp mayonnaise
- 2 cloves garlic, minced
PREPARATION
- Drain peppers, reserving 1 Tbsp liquid. Chop.
- Drain artichokes, reserving 2 Tbsp liquid. Chop.
- Spray 3-qr slow cooker with cooking spray.
- Combine spinach, cheeses, basil, onion, mayonnaise, garlic artichoke hearts, and peppers. Stir in reserved liquids.
- Cook on high 2 hours.
- Stir. Cook 30-60 minutes longer.
- Serve with crackers.
