Curried Bean Soup
INGREDIENTS
- 1 quart mason jar with lid
- 1/2 c white beans (cannellini)
- 1/2 c red kidneys
- 1/2 c green split peas
- 1/2 c red lentils
- 1/2 c black beans
- 1/2 c great northern beans
- 1/2 c yellow split peas
- 1/2 c pintos
- 2 tsp chicken bouillion powder
- 2 tsp dried minced onion
- 2 tsp dried parsley
- 2 tsp curry powder
- 1 tsp garlic powder
- 1 tsp garlic powder
- 1 tsp coriander
- 1/2 tsp salt
PREPARATION
- In one quart mason jar, layer beans in order.
- In a small zipper bag, combine remaining ingredients and place on top of beans.
- Seal jar; attach instructions.
INSTRUCTIONS
- Rinse beans and place in large pot.
- Cover with water and soak overnight.
- Drain beans and return to pot.
- Add six cups water, cover, and bring to a boil on high.
- Reduce heat and simmer 1-1/2 hours.
- Add 2 cans diced tomatoes and seasoning mix.
- Simmer another hour or until beans are tender.
